Produced from a tree that can extend up to 50ft tall and thrives best in the shade and humidity of tropical forest, cocoa has its origins in the upper Amazon basin. The tree is so particular that it only grows between 15 degrees north or south of the equator. The methods used are those that have been relied on for more than a century, simple technology and manual labour.
